Salmon with asparagus and parmesan
For 3 portions:
- Preparation: 15 minutes
- Cooking: 20 minutes
Ingredients:
- 400gr of salmon
- 500gr of asparagus
- Juice of one lemon
- Zest of a lemon
- 1 tsp garlic powder or a crushed garlic clove
- 5 tbsp of olive oil
- 1 tsp of salt
- 50gr of grated Parmesan
- Pepper to taste
Instructions:
- Preheat the oven to 210° C (or 410° F)
- In a bowl, combine the lemon juice, lemon zest, garlic, salt, olive oil, Parmesan, and pepper.
- Wipe the salmon with a paper towel to remove moisture. Wash and cut the asparagus.
- Place a piece of parchment paper at the bottom of your ceramic dish and add the salmon and asparagus.
- Pour mixture from bowl over the salmon and asparagus. Place in the oven for 15-20 minutes until the asparagus is tender.
