Vegetable and Truffle Cheese Gratin

  • 1 large potato
  • 1 small sweet potato
  • 1 medium parsnip
  • 100g truffle cheese
  • Olive oil
  • Salt and pepper


  1. Preheat the oven to 180°C (350°F).
  2. Peel the vegetables and slice them thinly using a mandolin.
  3. Arrange the slices in the ramekins, alternating the vegetables. Drizzle a few drops of olive oil every 3 slices.
  4. Top with a bit of truffle cheese and bake for 35 minutes. Check to see if it is cooked with a knife tip, which should easily pierce through.
  5. At the end of the cooking time, season the gratins with salt and pepper before serving with salad, and the meat or fish of your choice.
