Vanilla and Passion Fruit Crème Brûlée

  • 400ml of coconut milk (or single cream)
  • 2 passion fruits
  • 1 vanilla pod
  • 3 egg yolks
  • 40 g of unrefined white sugar


  1. In a saucepan, scoop out the passion fruits. Add the coconut milk and the scraped vanilla pod.
  2. Mix and heat the mixture over low heat until it starts to simmer, for 5 to 10 minutes.
  3. In a bowl, beat the egg yolks with the unrefined cane sugar.
  4. Place a fine mesh sieve over the bowl and strain the coconut milk mixture into it. Mix everything together.
  5. Place the “For You” ramekins in a large dish. Fill them with the crème brûlée mixture, then fill the large dish with water.
  6. Bake in a preheated oven at 110 degrees Celsius for 1 hour and 15 minutes.
  7. At the end of the cooking time, let the crèmes cool for at least 2 hours in the refrigerator.
  8. Once set, sprinkle some sugar on the surface of the crèmes and burn them using a blowtorch.
