Homemade sea bass croquettes with panko breadcrumbs

  • 200 g sea bass
  • 4 tbsp wheat flour
  • 1 egg
  • 2 thick slices of frozen bread
  • Cooking oil
  • Salt and pepper


  1. Prepare the panko breadcrumbs: after removing the crust, blend the frozen bread until you obtain a fine powder. Place in a shallow bowl.
  2. Cut the sea bass fillets into 6 cm pieces. Wipe with some absorbent paper and season with some salt.
  3. Whisk the egg in a bowl and place the flour in another shallow bowl.
  4. Coat the sea bass pieces: place them in the flour, followed by the whisked egg and then the panko breadcrumbs.
  5. Heat the cooking oil in a frying pan over a medium heat. Cook the croquettes for about five minutes on each side.
  6. Once cooked, season with pepper and eat with your favourite sauce.
